The new make malt and grain spirit is transferred into oak casks that have previously contained either sherry or bourbon and is left to mature for a between three and 25 years. It is during this time that the magic begins and the clear new make spirit starts to interact with the specially selected casks. The wood starts to impart its distinct flavours and aromas. For each year that the cask sits slowly maturing, approximately 3% is lost to the angels.
When our whisky has matured for a minimum of three years, but often much longer, samples are drawn and a further round of analysis takes place. Specific casks are then identified by our Master Blender to be selected for the Catto's blend. These malts and grains are then blended and left to marry before being bottled as a blended Scotch whisky.
